아이들 방학이라서 간식 걱정이신 주부님들 많으실거에요.
저는 어제 닭강정을 아이들 간식으로 만들어보았는데요.
그동안은 항상 배달음식으로만 생각햇던 닭강정을 이렇게
만들어먹으닌까 색다롭고 너무 맛있더라구요.

닭강정 재료 : 닭가슴살 500g, 다진생강 1큰술, 다진마늘 1/2큰술, 청주 2큰술, 소금과 후추 약간, 전분가루 10큰술, 계란흰자 1개, 카레가루 약간(1큰술), 다진양파 2큰술, 다진파 2큰술, 고추 1개(취향대로), 다진피망 1큰술 닭강정 소스 : 물 10큰술, 간장 4큰술, 청주 4큰술, 올리고당 5큰술, 설탕 1큰술, 케찹 5큰술, 고추장 1큰술 닭강정에 추가로 넣으면 좋은것 : 가래떡(취향대로), 호박씨 2큰술, 호두분태 1큰술, 아몬드분태 2큰술, 땅콩가루 1큰술, 참깨 1큰술 + 올리고당 2큰술 |

* 닭가슴살 500g을 준비해주는데요.저는 큰닭은 사서 가슴살만 골라냈어요.
닭가슴살만 따로 판매하는게 있으닌까 그것을 사용해주셔도 좋을듯하구요.
큰닭을 2마리 정도 사서 살만 많은곳을(순살) 골라서 손질해주시면좋을것같아요.
* 닭가슴살을 적당한 굵기로 썰어줍니다.먹기좋은 크기로 썰어주시면 될것같아요.
* 손질해둔 닭가슴살을 다진생강 1큰술을 넣고 마늘 1/2큰술을 넣고 소금과 후추를
약간 넣고 청주 2큰술을 넣어 버무린뒤 재워둡니다.15분에서 30분정도 재워주시면되요.
미리 우유 1컵에 닭가슴살을 담궈 잡내를 제거해주시면 고기가 더욱더 부드러울수있어요.

* 양파, 파, 피망은 깨끗이 씻어서 손질을 해주시고 적당히 다져줍니다.양이 그렇게
많이 필요하지않기때문에 조금만 다져주시면될것같아요.고추는 어슷썰어주시면되요.
* 떡은 차가운물에 담가놓은후에 먹기좋게 썰어주시면 될것같아요.떡외에 닭강정에
들어가면 좋을만한 땅콩을 굵게 다져서 준비해주구요.그외에 견과류들을 준비해줍니다.
* 물 10큰술, 간장 4큰술, 청주 4큰술, 올리고당 5큰술, 설탕 1큰술,
케찹 5큰술, 고추장 1큰술을 섞어서 양념장을 만들어줍니다.
"청정원 올리고당"을 넣어주었답니다.올리고당을 넣어서 윤기가 좔좔 흘러요~

* 미리 재워둔 닭가슴살에 전분가루 10큰술과 계란흰자 1개, 카레가루 1큰술을 넣어서
잘 섞어줍니다.골고루 잘 섞어주셔야해요.저는 부침가루가 없어서 전분가루를 사용해주었습니다.
* 전분가루를 묻혀서 잘 섞은 닭가슴살을 2번튀겨줍니다.1번 바짝 튀겨도 좋은데요.
2번튀기면 더욱더 바삭하게 만들수있답니다.160~170도의 기름에서 5분이상 노릇노릇하게
튀겨내줍니다.한번 튀겨내주신후 키친타올에 얹어 기름을 제거후 한김을 식힌후에 다시끓는기름에
2~3분이상 가볍게 튀겨내줍니다.이렇게 두번 튀기시면 속까지 충분히 익고 바삭바삭해요.
* 물에 담가서 불린 가래떡도 바삭하게 튀겨내줍니다.3분정도 튀겨내주시면 되요.

* 포도씨유 1숟가락을 두르고 다진양파 2큰술과 다진파 2큰술 그리고
어슷썬 고추와 다진피망 1큰술을 넣고 살짝볶아줍니다.
* 미리 만들어논 양념장을 넣어서 끓여줍니다.약한불에서 오랫동안 끓여서
걸쭉하게 만들어줍니다.여기에 꿀과 양파즙, 딸기잼을 넣으면
더욱 향긋한 향을 맛볼수있죠.걸쭉하게 쫄여놓으면 더욱더 맛있어요.
* 미리튀겨놓은 닭가슴살과 떡을 걸쭉하게 만들어놓은 양념소스에
넣어서 약불에 골고루 잘 버무려주면 완성이된답니다.이때 다진땅콩과
아몬드, 호두, 호박씨등 넣고싶은 견과류등을 넣어주시구 올리고당 2큰술을
다시 넣어서 볶아내줍니다.땅콩이랑 깨넣어주심 좋을듯 ~~

닭강정은 생각보다 달지않아요.설탕을 적게넣는 대신에 "청정원 올리고당"을
넣어주었어요.그러닌까 아이들 건강에도 좋구요.매운거 잘 못먹는
아이들도 즐겨서 먹는음식이랍니다.겉은 바삭바삭하고
속은 부드러운 닭에 매콤달콤한 소스가 잘 어울린답니다.

닭강정에 들어가는 닭가슴살은 닭 부위중에서 지방이 적고 단백질이
풍부하죠 그래서 다이어트에도 도움이되죠.은근히 부드럽고 담백하구요
그리고 카레가 우리몸에 좋으신거 아시죠?? 카레향도 느낄수있으닌까 더욱더 좋구요.
카레 좋아하는 아이들이라면 더욱더 넣어주면 좋죠 ㅎㅎ
