The title of the book is "Not Your Topical Ice Cream". Most ice creams are soft and melt quickly. But Turkey's ice cream called dondurma is chewy, hard and slow to melt. Dondurma's means "frozen" or "freezing". Also, dondurma has a special ingredient. It make Turkish ice cream hard and thick. Salep is the roof of a wild orchid that grow naturally. All over Turkey, you can easily find tower of stacked ice cream cones and a vender using a long metal scoop to churn dondurma. Turkish people are love to tease their customers by sticking the dondurma at the end of their long scoop and waving it.
