Korean Yuja Cha (Yuzu Tea) is deliciously sweet and tart and full of Vitamin C. Yuja (citron or yuzu) is a citrus fruit that is yellowish green, similar to the lemon, but with a very acidic and dry pulp. Popular in the winter and also as a Korean cold and flu remedy, it is very easy to make at home if you can find fresh citron. If you cannot find fresh yuja, then many Asian groceries and almost all Korean markets will sell the Yuja Chung (Citron Tea Marmalade).
The citron is a fragrant, fibrous fruit used mainly for its outer peel, which can be used medicinally for the treatment of seasickness, pulmonary problems and intestinal ailments. Some believe that citron oil also has antibiotic properties. The interior of the fruit is very dry and largely inedible. In western cuisine, the most common use for citron peel is in the baking industry, where it is often candied for cakes, puddings and sweet rolls.
A Serene Tea Break With Korean Lemonade
The iced tea list at Franchia, the invitingly cool and serene Korean cafe and tea room that opened last month at 12 Park Avenue (34th Street), includes a number of decidedly tealess fruit-based drinks. One made with citron, which shades in the glass from pale to gold, is like lemonade, but modestly sweetened and with a refreshing hint of bitterness from the citron peel. Franchia serves it for $5 a glass or $3 to go.
The marmaladelike citron mix used to make it is available in the tea section at Han Ah Reum, the Korean market at 23 West 32nd Street and at 29-02 Union Street, Flushing, Queens. A big jar of the mix, about 2 1/4 pounds, is $8.99. A tablespoon mixed in a glass of ice water is all that it takes. The label is mostly in Korean, but bears a picture of citrons, and there is a sticker on the back that says "citron tea."
