A: Hey, Michelle! I've never seen you at this grocery store before.
M: Yeah, I sometimes come here because there are more options for people with dietary restrictions./ A: Oh, like gluten-free food?
M: That's only scratching the surface. My husband, Jack, has gluten sensitivity. Our daughter is severely lactose intolerant, and our sun has a nut allergy.
A: Food sensitivities and allergies seem to be on the rise.
M: Yeah, I really have my work cut out for me when I make family dinners. I have to be so careful.
M: One of the hardest things is ordering food for delivery. I can't take a chance that a restaurant might use peanut oil for cooking, for example.
A: I'm sure that keeps you on your toes.
M: It's the same with restaurants that claim to sell gluten-free options. If they make a mistake, my husband feels miserable for the next two days.
A: What can you do?
M: Well, we know a few restaurants that have never screwed up, so we order from them./ A: It's good to have reliable options.
A: Are there any meals you can make all the time that everyone can eat?
M: I make a mean stir try. I use gluten-free soy sauce and never add nuts. And there's no dairy in it, so everyone is happy.
A: All this cooking must be labor-intensive, especially since you work full time.
M: My husband helps a lot with the shopping and cooking. Since he's got skin in the game with his gluten intolerance, he's really diligent.
A: What about the kids?/ M: Oh, yeah They both love chopping vegetables and stirring sauces.
M: I have to admit, though, that sometimes I feel like I'm in over my head.
A: What do you do to make yourself feel better?
M: I can't Iive without my Pad Thai or four-cheese pizza, so I sometimes go out to eat alone and get my favorite dishes. But I feel guilty about it.
A: You do so much for your family, there's nothing to feel guilty about.
M: Thanks for saying that.
A: It's true. You're a real hero and deserve to be rewarded.
M: You know, there's a silver lining to all of this. My family eats really healthy because I cook really good food for them.
A: And you keep them out of harm's way at the same time.
M: I never thought of it that way.
