항가리 출신으로 미국의 생화학자인 스젠트 기오르기는 세포가 에너지를 조달하는 방법과 비타민 C를 분리해 내는
방법을 발견해서 1937년에 노벨상을 받았다.
그는 필수지방산을 황이 풍부한 단백질과 결합시켜 인체에 공급하면 체내의 산소의 양이 증가하는 것을 발견했다.
독일의 생화학자 요하나 루드비히는 바로 이 이론을 응용해서 1950년대 초에 암환자를 치료할 수 있는 식이요법을 개발했다.
그녀는 암환자의 혈액을 30년간 연구해 본 결과 상태가 심한 암환자의 혈액 속에는 포스파티드와 리포단백질같이 필수적인 중요한 물질이 결핍되어 있는 것을 알아내었고 그런 자연적인 성분들을 약 3개월간 보충하면 종양이 서서히 줄어들고 힘이
생기고 빈혈이 사라지고 간기능은 개선되는 것을 발견했다.
그 후 그런 필수적인 물질을 환자들에게 공급할 수 있는 자연적인 방법을 모색한 결과 스젠드기오르기의 이론에서 해답을
찾아내었고 10년이상 암환자를 대상으로 임상 실험을 하여 암을 예방하고 치료까지 할 수 있다는 것을 알게 되었다.
그 결과 3-6찻숟갈의 아마씨 기름과 1/2컵의 저지방 코티지 치즈를 배합하는 식이요법을 개발하게 되었다.
아마씨 속에는 다가불포화지방산의 일종인 리놀산이 풍부한데 그녀는 이 지방산이 부족하면 산화효소가 생기고
그 산화효소가 암세포의 성장을 유도하고 또 많은 만성적인 질병을 유발하는 것으로 보고 있다.
리놀산이 풍부한 식품은 아마씨, 해바라기씨, 대두콩, 호두이며 가공하거나 열을 가하지 않고 짜서 만든 기름이어야 효과를

아미씨기름 속에는 오메가-3 지방산과 오메가-6 지방산이 풍부한데 이 지방산이 암의 혈관생성을 촉진하는
프로스타글라딘을 억제해서 혈관생성을 저해한다.

그녀는 암 치료방법을 개발한 여성 중 이론에 가장 밝고 문제의 본질을 정확히 파악한 뛰어난 과학자이다.
독일에서 손꼽히는 생화학자로 이미 45년 전에 필수지방산의 중요성을 알고 있었고 유럽에서 최고 가는 암 연구가이다.

A Conversation With Stan Mann

Over 8000 years ago, flaxseed -a multi purpose, oil rich seed began serving civilizations in a variety of ways. Known as ‘linseed’, it offered something to the weaver, the painter, the physician, and the cook. Then, through a sublime stroke of genius, the humble flaxseed got better. Fast forward to the year 1992, and meet Stan Mann, a Minnesota based teacher, health and nutrition researcher, and the developer of OMEGASENTIALS , the only edible flaxseed product on the market today, which is stabilized, and fortified with over eighteen nutritional elements to insure optimum performance in the human body. Recently, I asked Stan to sit down with me and share the amazing genesis of OMEGASENTAILS and his passion for health and balance.
CLC: Stan, flaxseed has been around for centuries. If we read the history books, we see that people all over the world have used flax in every department of their lives. They have used it to make clothing, paint, medicines, and bread- to name just a few of its applications. How did you get interested in flax, and what made you determine that flaxseed needed a nutritional makeover after all these years?
SM: I got interested in flax, by what appears to be an accident, - but, since I don’t really believe in accidents, I have to say, that I was ‘destined’ to discover flax. I happened to meet an individual who was eating bread prepared with flaxseed, and this person swore that he had more energy for all of the activities in his life, - as a result of eating the bread. When I inquired about the flaxseed in the bread, I was given some reading materials, which extolled the virtues of flaxseed and in particular, the virtues Omega 3 fatty acids, one of the main constituents of flaxseed. The information I learned about Omega 3 fatty acids fascinated me, because I saw that they played a key role in supporting every function in the human body. Needless to say, I found myself immersed in an intense examination of the benefits of flaxseed and Omega 3’s. I began to compile and review information from internationally respected authorities on flax, such as Johanna Budwig, and Paul Stitt. But, it was when I made an acquaintance with a book called "Fats That Kill, Fats That Heal", by Eudo Erasmus, --that a more intricate understanding of flaxseed began to take shape in my mind. I was discovering that flaxseed was a precious food resource, but one that was highly unstable in the presence of oxygen. I was discovering that, in order for humans to get the full benefits of flaxseed and essential fatty acids into their bodies, the food needed a balanced delivery system.
CLC: Once you determined that flaxseed needed a balanced delivery system, you set out to make available a product, that would provide this delivery system?
SM: Yes. I designed a flaxseed formula that would be stable in the presence of oxygen, and would integrate essential nutritional factors such as B6, B12, vitamins A and E, zinc, calcium, and magnesium. I fortified this mix, with antioxidant rich herbs and other food elements that are rich in the kind of nutrients, which protect, enhance, and maximize the properties of flax.
CLC: The ingredient label on your OMEGASENTIALS product package reads almost like a recipe, rather than a clinical formula. Flax, rosemary, sage,.... As a cookbook author, I have to say, that, when I first saw it, my tastebuds began to ‘water’...Yet, as someone who has studied nutrition for many years, and has made a special effort to integrate sound nutritional principles into my recipes, there is no doubt in my mind, that this is ‘more’ than just a taste pleasure. You seem to have created a dietary supplement that is unparalleled in terms of its balance and synergy.
SM: It’s all about balance and synergy. I coined the phrase ("It’s all about balance") on the OMEGASENTIALS product label itself, because OMEGASENTIALS is a product whose ingredients have the potential to balance the body and mind as a whole. It was important to me to create a product with the ultimate balance, because I myself was in search of balance at the onset of creating it. For many years prior to my flax research, I committed my share of lifestyle sins. Although I possessed a graduate degree in Physical Education, I was eating a less than balanced diet, and at times, drinking more than moderate amounts of alcohol. I was not a ‘walking, talking example’ of a person who was balanced in body, mind and spirit. And, because I knew deep down that I was missing balance, I challenged myself to find the meaning of it. My research into flaxseed, as well as whole foods, was an integral part of discovering what balance is, because it disciplined me. And, discipline, I feel, --is essential to securing balance in everyday life.
CLC: I’d love for you to share your knowledge about ‘why’ some of the special ingredients you have added to flax, are so important to the absorption of Omega 3 fatty acids, as well as the balance of the body and mind. But, first, maybe you could say a few words about the local -or domestic origins of flaxseed and the basic constituents of flaxseed which play a role in building health.
SM: Certainly. Flax, -is a tiny, glossy seed with either a brown or golden colored husk. Domestically, we find flax growing in the north and northwestern United States. Canada is another home for flax. The seeds- which are harvested in the late summer- from blue flowering fields, are still the rich source of fiber and oil that they were centuries ago. But much more is known today, --in scientific terms, about their therapeutic value-to humans. For instance, we know that flax contains lignans. Lignans, are fibers that have anti cancer properties. The lignans in flax are known to deactivate cancer-forming compounds in the intestine and in the blood stream. According to flax expert Johanna Budwig, lignans rely on the sulphurized protein content of flaxseed for efficacy in the body.
CLC: It is really exciting to know that lignans play a role in preventing cancer, because, obviously, we need more answers and more help, in the area of empowering ourselves to prevent cancers. What I like about eating OMEGASENTIALS , is that, - it is easy. It requires literally no preparation. I can mix it into the family’s morning juice or smoothies, or sprinkle it into a muffin batter. I can take a packet with me on the road during the day, and sprinkle it onto whatever I’m eating at lunch.... soups, salads, sandwich spreads, etc.
SM: Yes, - I agree. It’s easy to use, - and it beats eating kale, cabbage and broccoli every day, if you don’t have the inclination to enjoy such ‘other’ cancer fighting foods on a regular basis.
CLC: In addition to the cancer fighting lignans in flax, how do Omega 3 essential fatty acids fit in?
SM: Omega 3 essential fatty acids are contained in the natural oils within the flaxseed itself. They are a type of ultra unsaturated fat, which is known in the scientific community, - as alpha linolenic acid, -or Omega 3. Omega 3 fatty acids are the most therapeutic kind of fat you can put into your body, because, not only do they regulate all body functions, --they are also a precursor to other essential fatty acids that the body manufactures, --such as EPA, SDA and DHA. Without Omega 3 linolenic acid, (LNA), the other fatty acids are not synthesized in the body. In a nutshell, - or, if you prefer, a flaxseed husk,... Omega 3 fatty acids are essential to life. The problem is that no one, who eats processed food, gets enough of them, because food manufacturers have wiped them out of the food supply.
CLC: Since learning on my own, -about the importance of getting essential fatty acids into the diet, -it has always concerned me, that people everywhere are cutting fats out of their diets, almost completely, -out of ‘fear’, -that all fats are the enemy. People don’t realize that 60 percent of the brain is made of fat, and that, in order to think and learn we need fatty acids to help it function. People don’t realize, that in order to lose weight, they need ultra unsaturated fatty acids to burn saturated fat in their body cells. It seems to me, that American’s can’t be healthy and balanced without Omega 3 fatty acids, and yet as a nation, we try in vain, - to get healthy without them.
SM: The truth is, we can’t expect to be running on all cylinders without fatty acids. They regulate and maintain virtually all life sustaining processes in the human body. They lower cholesterol and burn fat, just as you implied. They regulate the production of hormones, which in turn stimulate the immune system. They alleviate pain and inflammation. They provide fuel for the neurotransmitters in the brain, which we cannot think and feel well without. They nourish the skin cells. And, these examples just scratch the surface. The documents, which support the use of Omega 3’s in human nutrition, are astounding. .
CC: I myself, first learned about flaxseed over 27 years ago, when I was a teenager suffering with health problems. I was introduced to a renowned naturopathic doctor at a health convention that was designed to educate the public about preventative health. The doctor, who happened to carry a little pouch of flaxseed with him wherever he went, showed me how he mixed the ground flax with juice -for an energy giving, health balancing drink. Following the doctors’ example, I began to mix and sip my flax cocktail. After experiencing the broom like effects of flax on my digestive system, and its polishing effects on my skin, I became really inspired. I began creating dozens of flax based beverages and eventually published them in two recipe books. (See Candia's books on this web site). Since trying out your OMEGASENTIALS , I have been mixing it in with the recipes from my "Super Smoothie" book, -and I’m falling in love with flax in a whole new way! Tell me, about the herbs that you have added to OMEGASENTIALS , which give it such a unique and delicious flavor.
SM: The herbs you are tasting in OMEGASENTIALS , are rosemary and sage. The herbs, although they lend a delicious, subtle flavor to the product, - were combined with flax primarily, to provide antioxidant values. Many people aren’t aware of the fact that the oils in flax must be protected from oxygen. To protect the delicate composition of fatty acids in the flax, we first stabilize the flax using a patented process. This prevents rancidity. Then, to help in the metabolism of the fatty acids within the body, - and to keep them from destruction by free radicals, the antioxidant herbs are added. I added rosemary to the flax, because research showed that it had 4-5 times the antioxidant value of vitamin E.
CLC: Are there other antioxidant factors you add to OMEGASENTIALS ?
SM: Rice bran is another ingredient I chose, because of its vitamins and minerals, which enhance and protect the integrity of the flax.
CLC: You feature an ingredient known as inulin on your product label. For our readers, what do you derive inulin from, and what impact does it have on the balance of your product?
SM: Inulin, is a carbohydrate like substance that is isolated from chicory root, and used to manufacture fructose. This ingredient encourages the proliferation of good bacteria in the intestine. Coupled with the lignans in flaxseed, it makes for a dynamic ‘housekeeping duo’ inside the body.
CLC: Can you talk a little bit, about the co factors that you add to the flax itself and why they are important?
SM: In order for flaxseed and essential fatty acids to be metabolized properly, vitamins are needed. If flaxseed is eaten plain, without co factors such as B6, B12, and zinc, the flax will deplete the body of these nutrients. Since most people are already deficient in these vitamins, especially vegetarians- to some degree, they will be further depleted. Flax oil, for instance, is shown to deplete the body of vitamin E. I have added vitamins E and C, and the B vitamins, as well as zinc, folic acid and riboflavin, which act as a reliable delivery system for Omega 3 fatty acids.
CLC: Flaxseed, I know, contains calcium. Yet, you fortified it with more calcium.
SM: Actually, I fortified the flax with both magnesium and calcium. Calcium absorption is dependent on magnesium. And many people, are deficient in both. Many women are concerned about getting enough calcium, so they load up on calcium supplements. But, unfortunately, many of the calcium supplements don’t contain magnesium, or they are made from highly non-absorbable forms of calcium.
CLC: I’m curious to know why you added tuna oil to OMEGASENTIALS . As a vegetarian, I wasn’t sure at first, if I could embrace this ingredient, but I don’t notice any kind of fishy taste to the flax, and, -- I’m trusting that there is a good reason you put it into the product.
SM: A very small amount of tuna oil is added to OMEGASENTIALS , and although a small amount is added, it has some very large benefits. It provides DHA-the last in the series of Omega 3 fatty acids, which is critical for the health of the brain and the eyes. The research on DHA is growing every day. And it is showing us that it may help with widespread imbalances such as learning disorders, and perhaps even conditions like Alzheimer’s.
CLC: I have personally experienced a variety of health benefits from eating OMEGASENTIALS , the most profound of which, has been ‘relief’, - from the cyclic inflammation I have experienced off and on for over 25 years, - as a result of suffering with endometriosis--a mysterious 20th century malady affecting over 5 million women. What health benefits have you, yourself, experienced-as a result of eating OMEGASENTIALS ?
SM: Would you like me to begin at my head, or my feet? Since eating at least two tablespoons a day of OMEGASENTIALS , I have experienced every possible health benefit I could have hoped to experience. I no longer wait out bouts of constipation. My skin is healthy and I have said ‘goodbye’ to the calluses on my hands and feet. My endurance has soared on all levels, including mental endurance and the peace of mind that allows me to meditate and feel calm inside. I have lost my fear of disease, including cancer, which my body was exhibiting early signs of years ago. I can only imagine the countless other benefits that are occurring in my body and mind as a result of including this fabulous food in my diet.

You have taken a food that I have long been passionate about- and you have made it that much more desirable in terms of health and healing. SM: Thank you. I would hope that OMEGASENTIALS represents a small, yet significant step in the evolution of dietary consciousness. I know I want to live to be a hundred and twenty five years old. And, I’m guessing there are at least a few others who share my vision. Right now, the chances are looking better and better.
