Minced with Care: A Table by the Bamboo Grove
Changpyeong in Damyang has been home to noble families since the Joseon period. Inside the lanes traced by the Old Walls of Samjicheon Village, Damyang, old houses still stand, among them the Historic House of Go Jeong-ju in Changpyeong. Tteok-galbi is said to have originated at the tables of these households. The meat is stripped from the ribs, finely minced, seasoned, then pressed back onto the bone and grilled. The dish demands considerable labor, yet both the elderly and children could eat it with ease. That tenderness reflects the tradition of Namdo, Korea's southwestern region, where elders are cared for and guests are received with utmost sincerity. The countless strokes of the knife were themselves an expression of hospitality.
Only Well-Aged Jang Makes Good Gejang
Gejang has been part of Korean food culture for centuries. Sallim Gyeongje (Farm Management), compiled by the late Joseon Silhak scholar Hong Manseon, records methods for pickling crab in both soy sauce and salt, evidence that keeping crab for later meals was already part of household life. Seosan and Taean border the broad tidal flats of the West Sea, where plump crabs were abundant. To preserve those crabs, above all one needed well-aged jang, the fermented soybean sauces and pastes at the heart of Korean cooking. This is why a jangdokdae, a platform for earthenware jars, stood at the heart of domestic life, as seen at the Historic House of the Gyeongju Kim Clan in Seosan, a National Folklore Cultural Heritage. Only when the seed ganjang, or soy sauce, replenished year after year, slowly seeps into the crab meat is gejang complete. The taste deepens in proportion to the years the jang has aged.
A Gentle Taste Drawn from Seawater
Tofu is made by curdling soy milk with a coagulant. Chodang tofu from Gangneung is distinctive for using seawater in place of conventional brine. According to local tradition, Heo Yeop, a Joseon official whose pen name was Chodang, boiled soybeans with spring water from the well beside his house in Gangneung and set the curd with clean water from the East Sea. The tofu later came to be known by his pen name. Curdled with seawater, it has a fine grain and a mild seasoning, so that the natural sweetness of the soybeans comes through even when the tofu is eaten plain. The sequence of soaking, grinding, boiling, and straining the beans, then setting the curd in a wooden mold and pressing out the water with heavy stones, has remained unchanged for generations. A tofu mold preserved at the museum bears witness to this time-honored process.
