[만드는 법]
1. 절인 배추 2포기 준비하기
: 배추가 작을 경우에는 3포기 준비
- 물5리터에 천일염4컵을 넣고 천일염을 녹인 후 반으로 가른 배추2포기(4쪽) 넣기
- 배춧잎 사이에 천일음 각70g씩 뿌린 후 7~8시간 절임 (절이는 중간에 한 번 뒤집어주기)
: 초가을 7~8시간 절이고, 추운 겨울은 12시간 절이기

2. 김칫소만들기
- 무 반 개를 0.2~0.3cm두께로 얇게 채썰어 준비
- 채썬 무에 고운고춧가루2큰술을 넣어 고르게 버무려 색을 냄
- 여기에 채썬 배 반 개를 넣은 뒤, 새우젓1큰술은 손으로 꾹 짜서 새우젓 국물을 넣고 새우는 양손으로 비벼 으깨어 넣어줌
- 멸치액젓1큰술반, 소금1큰술반, 매실청3큰술, 조청3큰술, 다진마늘3큰술, 다진생강1큰술을 넣고 고르게 잘 버무려줌
- 3cm길이로 썬 적겨자잎15장, 씨 빼고 채썬 홍고추채1개반, 돌려깍기하여 씨제거후 채썬 대추6개, 쪽파한줌, 불려 곱게 채썬 목이버섯4개를 넣어 고르게 버무려 김칫소 준비

3. 김칫소채우기
- 김장김치 담듯, 준비한 김칫소를 켜켜히 속을 채운 뒤, 겉잎으로 잘 감싸 김치통에 가지런히 담아줌
- 김칫소 채우고 남은 김칫소 국물도 모두 김치통에 붓기

4. 통배추물김치 부재료 - 무 손질하기
- 도톰하게 1.5cm두께로 무를 반달썰기 한 다음, 소금20g, 설탕20g을 넣고 1시간 절여줌 (30분에 한 번 뒤섞어주기)
- 절인 무에 고운고춧가루1큰술을 넣고 절인 토막무에 고춧가루 입자가 안 보이게 손으로 비벼가며 무에 색을 입혀줌
- 김치통에 고춧가루입힌 토막무를 이불 덮듯이 덮고, 김치통 가장자리 빈 공간을 채우듯이 꽂아두기(공기가 드나드는 것을 막아 신선한 맛 유지!)

5. 통배추물김치 옥수수육수 만들기
- 물4리터에 옥수수잎이 붙은 옥수수5개(1kg)와 육수팩에 넣은 옥수수수염20g, 대추씨6개(2의 김칫소 재료 중 대추채 준비하고 남은 것 활용)을 넣고 센불에 올림
- 물이 끓기 시작하면 센불에서 중불로 불을 줄이고 1시간 끓여 총 3리터의 옥수수밑국물을 준비
- 옥수수육수는 식혀주기

6. 통배추물김치 김칫국물 만들어 완성하기
- 믹서기에 씨 뺀 홍고추3개, 고운고춧가루2큰술, 옥수수육수약간을 넣어 곱게 갈아줌
- 먼포를 식혀준 옥수수밑국물에 끝을 담군 뒤, 면포 안에 믹서기에 간 고추즙, 간 배 반 개, 간 사과 1/4개, 간 당근 반 개, 간 무1/5를 넣고 조물조물하여 재료들이 우러나오게 함
- 여기에 소금6큰술로 간을 하고
- 김치통에 김칫국물을 가지런히 부어줌
- 하루저녁 실온 보관(숙성) 후 바로 냉장고에 넣고 먹기
