특징: 뿌리줄기에서 분지하여 나오는 잎 많은 가지는 길이가 1.5~6m에 이른다. 꽃이 피는 가지는 길이가 0.9m이며 곧거나 불규칙하게 가지를 뻗는다. 각 가지에는 지름이 약 5cm인 꽃들이 아주 많이 피는데, 녹색을 띤 꽃잎과 보라색 줄무늬가 있는 흰색의 입술 꽃잎으로 구성되어 있다. 열매는 3개의 면으로 이루어진 삭과 로 크기가 0.7~1.5cm이며 녹색이다. 열매 안에는 15~20개의 씨가 들어 있는데, 씨는 검은색이나 붉은색을 띤 갈색 또는 갈색을 띤 검은색으로 단단하며 모가 나 있다.
카르마몸의 종류로는 카르마모뭄에서 나는 카르다몸과 함께 생강과에 속하는 아모뭄속(Amomum), 아프라모뭄속(Aframomum), 알피니아속(Alpinia)에서 얻는 비슷한 향신료가 있다. 이들도 부를 때는 카르다몸이라고 하며, 아프리카와 아시아 지역의 요리에 사용되거나 진짜 카르다몸의 위화물(僞和物)로서 상업적으로 이용된다.
생강과 식물인만큼 생강스러운 향을 기본으로 깔되, 생강보다는 상쾌하고 시원한 느낌이 있으며 아주 옅은 레몬향 비슷한 향이 있다. 맛은 산미가 조금 있고, 생강스러운 아린 맛이 좀 있긴 한데 소량을 쓰기 때문에 보통은 다른 음식에 묻힌다.
그린 카다멈: 소두구 씨앗이다. "백두구"로도 부른다. 이것이 "진짜" 카다멈이고 색이 진한 다른 종류는 질이 떨어지는 다른 식물이다. 인도가 원산지이고 현재도 카다멈의 최대 생산지는 인도이다 .
블랙 카다멈: 두구속에 속하는 여러 식물의 씨앗이 "블랙 카다멈"이라는 이름으로 불린다. 인도 아대륙에서 주로 사용하는 향두구와 동아시아와 동남아시아에서 주로 사용하는 초과가 대표적이다. 그린 카다멈보다 훨씬 싼 유사품이다
분포 인도, 스리랑카, 과테말라에서 경작되는 것이 대부분이다. 각지에서 재배하고 있다.
원산지 인도가 원산지인 "그린 카다멈"이 "진짜 카다멈" 原産. 원재료인 카르다모뭄은 인도 남부의 다습한 숲에서 자생하기 때문에 야생 식물에서도 채취할 수 있다.
이용(도) 엘레트타리아 카르다모뭄(Elettaria cardamomum)의 씨나 마른 열매를 갈거나 통째 사용하여 만든 향신료. ‘cardamon’이라고도 쓴다. 향기로운 냄새가 특징이다. 독하고 약간 자극적이며 장뇌와 비슷한 매우 향기로운 냄새가 난다. 카다멈 또는 카르다몸은 생강과 소두구속이나 두구속에 속하는 몇몇 식물의 씨앗으로 만드는 향신료를 일컫는다. 향신료의 여왕 이라는 별칭으로도 불린다. 주로 뿌리줄기를 이용하는 다른 생강과 식물과 다르게 씨앗을 사용한다. 재배가 시작된 것은 겨우 200여년 전이다. 그 이전까지는 전부 야생에서 채취했다. 다른 카다멈 종류는 엇비슷한 향이 나는 값싼 아종이다.
인도에서는 차나 요거트 음료 아이스크림등에 넣어 향을 더하고 커리, 필라프, 가람마샬라, 마살라 짜이를 만드는데 사용된다.
아랍 지역에서는 전통 커피에 넣어 마시기도 하고 고기나 생선 요리, 소스, 드레싱,피클, 파이, 빵, 케이크 등의 제과, 제빵류 및 리큐르의 향을 더하는데 요긴하게 쓰인다.
서양에서는 겨울 음료인 뱅쇼에 넣어서 먹기도 하고 스웨덴 디저트인 셈라를 만들기 위해서는 빼놓을 수 없는 재료이다.
유럽 동부지역의 요리, 특히 카레 요리와 스칸디나비아의 페이스트리에 조미료로 널리 이용된다.

Elettaria cardamomum, commonly known as green cardamom or true cardamom, is a herbaceous, perennial plant in the ginger family, native to southern India. It is the most common of the species whose seeds are used as a spice called cardamom that has a strong aroma used in both savory and sweet cooking. It is cultivated widely in tropical regions and reportedly naturalized in Réunion, Indochina, and Costa Rica.
Growth
Elettaria cardamomum is a pungent, aromatic, herbaceous, perennial plant, growing to about 2–4 m (6 ft 7 in – 13 ft 1 in) in height. The leaves are alternate in two ranks, linear-lanceolate, 40–60 cm (16–24 in) long, with a long pointed tip. The flowers are white to lilac or pale violet, produced in a loose spike 30–60 cm (12–24 in) long. The fruit is a three-sided yellow-green pod 1–2 cm (0.39–0.79 in) long, containing several (15-20) black and brown seeds.
Use
The green seed pods of the plant are dried and the seeds inside the pod are used in Indian and other Asian cuisines, either whole or ground. It is the most widely cultivated species of cardamom; for other types and uses, see cardamom.
True cardamom may have been used in Ayurveda medicine as early as the 4th century BC.[6] Ground cardamom is an ingredient in many Indian curries and is a primary contributor to the flavour of masala chai. In Iran and India, cardamom is used to flavour coffee and tea. Cardamom has been used medicinally in traditional practices for nausea, kidney disorders, gum infections, and cataracts.[7]
In addition to its native range, it is grown in Nepal, Vietnam, Cambodia, Thailand, Sri Lanka, and Central America. In India, the states of Sikkim and Kerala are the main producers of cardamom; they rank highest both in cultivated area and in production.
Biology
The primary volatile components are terpinyl acetate and eucalyptol.
Ecology
E. cardamomum is used as a food plant by the larvae of the moth Endoclita hosei.
Varieties
The three natural varieties of green cardamom plants are:
-Malabar (Nadan/native), as the name suggests, is the native variety of Kerala. These plants have floral racemes (which bear the pods) that grow horizontally along the ground.
-Mysore, as the name suggests, is a native variety of Karnataka. These plants have floral racemes which grow vertically upwards. The Mysore variety has declined, however, in the past few decades owing to the emergence of the more resistant and better-yielding 'Green Gold' variety, and which is the most common form of cardamom harvested in Kerala.
-Vazhuka is a naturally occurring hybrid between Malabar and Mysore varieties, and the panicles grow neither vertically nor horizontally, but in between.
Recently, a few planters isolated high-yielding plants and started multiplying them on a large scale. The most popular high-yielding variety is 'Njallani', which is a unique high-yielding cardamom variety developed by an Indian farmer, Sebastian Joseph, at Kattappana in the South Indian state of Kerala. K. J. Baby of Idukki District, Kerala, has developed a purely white-flowered variety of Vazhuka type green cardamom having higher yield than 'Njallani'. The variety has high adaptability to different shade conditions and can also be grown in waterlogged areas.
