전 지금 부터 제가 실습을 들어 가기전까지 제가 배운 것들(waiter로써 알아야할점들, bar supervisor로써 알아야할점들,....restaurant에서 일할는 사람들<직위에 따라>이 알아야 할점)을 여러분과 함께 다시 공부하는 맘에서 이렇게 글을 올립니당..
그럼 먼저 waiter로써의 알아야 할점 몇가지를...
waiter들은 항상 personal grooming, deportment, honesty, punctuality, loyalty to employer, ability to work within a team,
positive attitude 를 중히 여겨야 합니당..
그리구 waiter로써 항상 몸에 지니고 있어야할 것들...
1. corkscrew (이것은 waiter's friend라고도 부릅니당,,)
2. ball point pen
3. handkerchief
4. small note pad
5. matches or lighter
이것들은 waiter's equipment라고 해서 없어서는 안되는 것입니당..
그리구 main types of food service로써는....
1. plate service
2. semi silver service
3. silver service
4. buffet or self service
5. room service
6. gueridon / voiture service..
이 있습니당..
위에 것들중 가장 힘들고 재밌는 것은 gueridon service로써 guest들 앞에서 직접 음식을 만드는 것입니당..
간단한 음식이지만 막상하려니까 참 힘들더군요...
불도 붙이구 재미는 있는데...
그럼 마지막으로 gueridon service에 얘기하구 이만 접겠습니당..
Gueridon Service.
방법 : 1. Mash anchovies with large fork to a paste. (add a little oil)
2. Prepare dressing by mixing all ingredients till well blended
3. Toss in dressing
4. Sprinkle over salad
5. Sprinkle according to customers requirement
2. Prawns in a Light Curry Sauce
재료 : Butter, Prawns, Curry powder or paste, Fresh cream,
Coconut (Desiccated), Lemon juice (fresh), Rice (boiled)
Parsley sprigs, Lemon Wedges, Coconut (shredded/toasted)
방법 : 1. Melt in pan over medium heat
2. Add and cook lightly, remove and keep warm
between two hot plates
3. Sprinkle lightly (or blend in thoroughly if paste)
4. Mix well to form a sauce
5. Sprinkle into sauce, cook till sauce thickens
6. Add a dash of lemon juice
7. Add prawns, (don't overcook)
8. Arrange prawns on plate beside rice, cover with sauce
9. Add lemon wedge and sprig of parsley for colour and/or toasted,
shredded coconut
방법 : 1. Melt over medium heat
2. Season kidneys and cook over moderate heat, turn and
cook other side
3. Remove and keep warm between two hot plates
4. Add chopped onion and sliced mushrooms and season
5. Return kidneys to the pan
6. Add madeira to the pan to dissolve the residue
7. Flame with brandy
8. Add cream, Demiglace and reduce sauce
9. Arrange kidneys on a hot plate
10. Coat with sauce
11. Sprinkle with parsley
4. Veal Marsala
재료 : Butter, Oil, Veal flattened out and seasoned, Salt, Pepper,
Marsala, Cream
방법 : 1. Heat butter & oil in pan over medium heat
2. Season veal with salt and pepper
3. Saute over medium heat
4. Remove veal and keep warm between two hot plates
5. Add Marsala & cream to form sauce
6. Place veal into sauce (do not overcook)
7. Serve immediately with appropriate vegetables
방법 : 1. Melt over medium heat
2. Season meat with salt and pepper, roll steak onto service
fork, unroll into pan
3. Cook quickly on each side on fairly high heat
4. Add Worcestershire sauce, turn steak
5. Remove steak and keep warm between two hot plates
6. Saute chopped onion/garlic/mushrooms
7. Replace meat
8. Add demi - glace/cream to make sauce
9. Reduce slightly
10. serve onto hot plates
11. Silver serve accompaniments
6. Bananas Flambe
재료 : Butter unsalted, Banana - peeled, cut 1/2 lengthwise or on a slant,
Brown or caster sugar, Orange juice, Jamaican rum 30ml
방법 : 1. Melt butter over medium heat
2. Add bananas and heat through
3. Sprinkle with brown or caster sugar and allow to
colour a little
4. Add orange juice to make a sauce
5. Flame with rum
6. Serve onto warm plates with vanilla ice cream
