Dog Days in China : 중국의 복날

NEW YORK — I see the Beckhams, David and Victoria (Posh), have acquired a couple of “micro pigs” as pets and that said pigs (65 pounds when fully grown) are now a fashionable item in Britain, at least among those who can afford a $1,000-plus price tag.
Perhaps Beckham is heeding Churchill, who had a penchant for pigs. The great man’s verdict: “Dogs look up to you, cats look down on you. Give me a pig. He just looks you in the eye and treats you as an equal.” Churchill’s view has some scientific basis. Pigs are smart and sociable. They’ve had a pretty bad rap, however. Two of the world’s great monotheistic religions — Judaism and Islam — prohibit their consumption. Generally, the notion of pigs as pets seems bizarre or repellent. Why? There’s nothing rational about the view that taking a pig for a walk on a leash is weird, while eating a pork chop, if you so choose, is reasonable. But then, after a visit to China, it seems to me that reason has little or nothing to do with the way we view animals and food. The Chinese, for example, eat dog (as well as cats, but I’m going to focus on dogs here). They ascribe to dog meat a formidable “warming” quality — the Chinese divide nutrition into “hot” and “cold” elements and seek balance between them — which makes it prized in many regions during winter. Now, we are appalled in the West at the notion of eating dog while considering it natural to have a dog as a pet — I own a Beagle myself (“Ned”) and I’m very fond of him. This is the inverse of the preponderant Western view of pigs: fine to eat (religious objections aside) but not to pet. But do pigs have any more or less of a soul than dogs? Are they any more or less sentient? Do they suffer any more or less in death? Are they any more or less part of the mysterious unity of life? I think not. There is a rational, and for some people a spiritual, case for being a vegetarian: Killing animals is wrong. However I cannot see a rational argument for saying eating dogs or cats is barbaric while eating pork or beef is fine. If you eat meat you cannot logically find it morally or ethically repugnant to eat a particular meat (I’m setting cannibalism aside here.) That’s the theory at least. Yet I must confess I’ve been having a hard time. My bout of anguish began a few weeks back on a wintry night in central China, in the restless megalopolis of Chongqing. I was cold, wet and seeking refuge. “What’s that?” I asked my resourceful interpreter, Xiyun Yang, pointing to a steamy, crowded establishment with a big red neon sign (the Chinese approach is, when in doubt, make it gaudy). “You don’t want to know.” “I think I do.” “It’s a dog restaurant.”
뉴욕--나는 베컴,데이비드와 빅토리아(포쉬)는 애완용 미니 돼지를 2마리를 가지고 있는대 그 애완용 미니 돼지(다 자랄경우 65파운드)는 적어도 1천달라 이상의 가격표 돈을 지불할수 있는 능력이 되는 사람들 사이에 영국에서 최신 유행 아이템으로 등장하고 있다. 아마 베컴은 미니 돼지에 펜천트(애호,기호)를 가지고 있었던 히딩(조심하는,주의깊은) 처칠이라고 할수 있겠다. 대인인 처칠수상의 평결은 개들은 주인을 존경하고 고양이들은 주인을 한수 아래로 본다는 것이다. 돼지를 볼라치면. 돼지는 사람을 평등하게 바라보고 사람을 동등하게 위협한다라고 했는대 따런 처칠경의 시각은 어떤 과학적인 근거가 있다. 돼지들은 똑똑하고 사교적인 동물이다. 그러나 돼지들은 배드렙(억울한죄,부당한형벌)을 뒤집어 쓰고 있다. 세계의 큰 대종교인 마너씨스틱(일신교의) 종교중의 양대종교인 유대교와 이슬람교는 돼지고기 먹는 것을 금하고 있다. 일반적으로 돼지를 애완용으로 한다는 것에 대한 개념은 치꽈이하거나 리펠런트(불쾌한,혐오감을주는)한 것으로 여긴다. 왜 그럴까?. 여러분이 폭찹(돼지갈비)을 먹는 것은 합리적이고 돼지를 레쉬(구속,속박,개줄)하여 산책나간다는 것을 이상하게 보는 시각에 대해서는 전혀 합리적인 근거가 없다. 그러나 그리고 나서 중국을 방문한후 나에게는 그런 우리의 동물 사랑 리즌(변명)이 우리가 동물을 반려동물과 그냥 먹는 음식이라고 바라보는 방법사이에 전혀 상통하지 않거나 전혀 관련이 없는 것 같다. 예를 들어 중국에서는 개를 잡아 먹는다(중국인들은 물론 고양이도 잡아 먹지만 나는 지금 여기서 개의 식용문제에 관하여 집중적으로 이야기 해 보고 싶다). 중국인들은 보통 음식을 찬성질이 있는 음식과 더운성질이 있는 보양 영역으로 나누고 그런 성질의 음식 사이에 균형을 맞추려고 하는대 그런 식풍습은 겨울철 중국의 여러지역에서 메이크프라이즈(소중이여기가)하는 식풍습인대 중국인들은 개고기를 정말 대단한 뜨거운 성질을 내포한 음식에 어스크라이브(속하는 것으로 생각하다)한다. 양인들은 개를 식용이 아닌 애완용 반려동물로 자연스럽게 생각하면서--나는 비글견을 가지고 있고 실제고 그 개를 아주 좋아한다--지금 우리는 개를 잡아 먹는 중국과(한국,베트남북부포함) 고기라는 개념에 대하여 서방에서는 어폴(오싹하게하다)하고 있다. 중국의 돼지건 개건 다 먹을수 있는 고기라는 개념은 돼지에 관한 서양의 프리판더런트(우세한,압도적인) 시각에 관한 서양의 보편적인 생각 즉 돼지는 애완용이 아니라 잡아 먹을 고기라는 개념에 대한 지배적인 생각의 인버스(역의,반대의)에 해당하는 것이다. 그러나 돼지가 개보다 더 영혼적인 개념이 더 많다는 뜻일까?. 돼지들이 어떤 센션트(지각력있는,마음,정신)을 가지고 있을까?. 돼지들이 죽음의 고통에 더 많이 시달릴까?. 돼지들에게 미스테리한 생명체일까?. 나는 그렇게 생각하지 않는다. 동물을 죽이는 것이 나쁘다는 것은 이성적인 이유일수도 있고 스피리추얼(정신상의,종교적인)것일수도 있고 야만적인 것일수도 있다. 나는 돼지고기와 소고기 먹는 것은 괜찮고 개와 고양이를 잡아 먹는 것은 야만이라는 생각에 동의하지 않는다. 만약 여러분이 고기를 먹는다면 여러분은 논리적으로 특정한 동물의 고기를 먹는것이 도덕적 혹은 윤리적으로 리퍼그넌트(불쾌한,모순된,반대를하는)하다는 것을 발견할수 없을 것이다(나는 이 외에도 케니벌리즘(식인풍습,잔인,만행)을 지목하고 있다). 최소한 이론상으로는 그렇다. 그러함에도 나는 개의 식용문제에 관하여 힘든 시간을 가졌었노라고 고백하지 아니할수 없다. 나의 한바탕의 격통(비통)은 중국 중부의 잠못이루는(편이쉴수없는) 거대도시 충칭에서의 어느 겨울밤의 몇주전으로 거슬러 올라간다. 나는 비에젖어 추위에 떨며 쉴곳을 찾고 있었다. 저게 뭐야? 라고 나는 빨간네온사인으로 찬란한 김이 나는, 많은 사람들이 있는 시설물을 가리키며 재치있는 나의 통역 씨윤양에게 물어 보았다(중국인들이 긴가민가할때 고디(화려한,촌스럽게야한)하게 하여 사람의 관심을 유발하는 중국식접근방법). 당신이 알지 않는 것이 더 좋을 것이라고 생각하는대 그곳은 보신탕집이야 라고 통역은 말 했다
It was then that I noticed the image of a puppy with floppy ears beside the Chinese characters. I gave Xiyun a long, hard look. “Dog’s really good,” she said. “I love it.” Images of Ned (and his floppy ears) popped into my head, as well as thoughts of what I’d tell my daughter, but I’d come to admire Xiyun’s gastronomic antennae (particularly for Sichuan noodles) and I tend to adhere to the I’ll-try-anything-once school. In we went. The menu was predictably dog-dominated: dog paws, dog tail, dog brain, dog intestine, even dog penis. We went for a dog broth, simmered for four hours, with Sichuan pepper and ginger. It was warming, with a pepper-tingle. The meat was tender, unctuous, blander than pork, but stronger than chicken. Later, the owner, Chen Zemin, explained how the best dogs for eating had yellow coats, weighed 30 pounds, and did miracles for arthritis. I’ll take Chen’s word for it. Dog was not easy for me. The memory has proved hard to digest. As it happened, our meal came shortly before the eruption of a furious online debate in China over a proposed “anti-animal maltreatment” law that would outlaw the eating and selling of dog and cat meat, making it punishable by fines of more than $700 and 15 days of detention. The legislation, now under review, immediately came under heavy fire. One restaurant owner in the Chaozhou region declared: “This is ridiculous! You make dog and cat meat illegal, but aren’t chickens, duck, goose, pig, cow, lamb also animals?” Another noted a local saying: “When the dog meat is being simmered, even the gods become dizzy with hunger.” I’m with these indignant protesters. I’m not happy that I ate dog. But I’m happy China eats dog. It so proclaims both a particularity to be prized in a homogenizing world and its rationality. Anyone who doesn’t want China to eat dog must logically embrace pigs as pets. But, as I’ve learned, logic has its limits. It’s the heart not the head that governs this world under the sway of the dizzy gods.
그때 중국인형 옆에서 귀를 플라피(펄럭이는)를 강아지의 이미지가 떠올랐다. 나는 씨윤에게 어두운 얼굴을 내 비첬다. 개들은 정말 착한 동물이죠 라고 그녀는 말 했다. 나도 개를 좋아해요. 기르는 개 네드의 이메지와 그 개의 펄럭이는 귀들이 나의 머리에 탁 떠올랐고 내가 나의 딸에게 말했던 생각이 탁 떠올랐지만 나는 게스트러나믹(미식법의) 더듬이를 흠모하게 되었고(특히 쓰촨미엔방면에는 더 대가) 나는 일단 마음먹고 먹어 보려고 한것은 죽어도 한번 먹어 보고야 말겠다는 쿠세가 있었다. 그 보신탕집의 차이딴(메뉴)에는 예상했던대로 개고기가 주류를 이루고 있었는대 개 포(발),개꼬리,개골,개내장, 심지어 개자지 까지 있었다. 우리는 쓰촨고추와 생강을 넣고 4시간을 푹따린 개전골탕을 주문했다. 그 보신탕은 알싸한 고추를 넣어 따뜻하게 대워져 나온다. 개고기는 돼지고기보다 부드러웠고 언추어스(입에살살녹는) 블랜드(부드러운)하였지만 닭고기 보다는 질겼다. 나중에 식당주인인 천저민씨는 먹기 딱 좋은 개는 30파운드의 몸무게가 나가는 황구이고 개고기는 아쓰라이티스(관절념)에 특효라고 설명했다. 나는 전적으로 천의 이야기를 믿었다. 개고기를 먹는 것은 쉬운일이 아니었다. 개에 대한 선입견적 기억으로 개 고기를 소화시키기 힘들었다. 에즈잇헤픈즈(우연히,공교롭게도), 우리의 개고기 시식은 개고기와 고양이 고기를 먹거나 팔경우 700달라에 상당하는 벌금과 15일의 구류에 처하겠다는 개과 고양이를 먹는 것을 불법화하는 입법내용중에 들어 있는 앤티동물 멜트리트먼트(학대)에 대하여 중국에서 찬반의 격렬한 논쟁이 벌어지던 시기의 바로 직전에 개고기 시식이 이루어졌다. 지금 검토중에 있는 개와 고양이 식용금지법은 즉각 집중포화를 받게 되었다. 차오저우의 어느 개고기집 식당주인은 이법은 참 웃기는 법 입니다 라고 말 했다. 사람들이 개와 고양이 먹는 것이 불법이면 지러우,오리고기,거위고기,돼지,양같은 고기를 먹는 것은 다 똑같은 고기인대 불법이 아니란 말인가?. 또다른 사람은 개고기를 은근한 불에 풀 끌여 따리면 심지어 귀신도 그 개고기 먹고 싶은 마음에 디지위드(마음이들뜨다)한다. 나는 이런 인디그넌트(성난,분개한) 저항꾼들과 행동을 함께하고 있다. 나는 개고기를 그렇게 좋아하지 않는다. 하지만 나는 중국이라는 나라가 개고기 먹는것에 행복하다. 그것은 세상의 보편적인 식문화 전통에 따라 개고기를 먹지 말아야 한다는 보편성의 세상과 그런 새상의 합리적인 이치를 프라이즈(존중하다)하여야 한다는 두가지의 특수성은 두말하면 잔소리다. 중국이 개고기를 먹어서는 안된다고 말 하는 서양사람들은 라지컬리(필연적으로) 돼지를 애완용하는 문화도 반드시 받아 들여야만 한다. 그러나 내가 배워 알고 있듯이 그 논리라는 것이 한계가 있다. 디지(현혹하다,어지러운,어리석은) 신의 지배하에 있는 이 세상을 주관하는 것은 머리(합리적이성)가 아니라 따뜻한 마음이다
