Thanks to forum member "oneforthepot" for this article on preparing a rabbit for the pot.
First catch and kill your rabbit then you must drain out all of the urine. Hold the rabbit tail down and place your knuckles on and into its abdomen and press inwards and downwards at the same time, until they reach the genitals. You can also remove the tail at this time.
Now you need to remove the guts or innards, to do this I like to hold up a section of belly fur and place a small nick through this with my knife.
Doing it my way leaves the membrane intact which holds the guts. Be very careful not to cut into the internal organs as doing so will spoil the meat.
Carefully run the very tip of your knife down the membrane till you can slip two fingers into the cut and pull apart, this will widen the cavity, allowing you access to the internal organs which must be removed quick and cleanly. Take hold of the rabbit by its back legs and give it one firm shake. If done well the stomach and guts should hang down and all that you need do then is cut the stomach from the liver and remove it.
All that remains is to remove a small length of intestine will be clinging to the rabbits rectum, so knock that clear with your knife. The advantage of this method is that your hands stay cleaner.
Then its time to take your catch home and get it ready for the pot.
Separating a rabbit from its skin is the easiest of tasks. I like to skin a cold rabbit, others would rather tackle the task when still warm, but you will get plenty of practice either way. First cut off the hind legs at the hock and the front ones at the wrist. I use a cleaver for this as it makes the job easy.
Then take the skin where you opened the rabbit's belly, and pull it away from the flesh until you have loosened the skin on both sides right up to backbone. Do not pull too hard, or you may break the spine. Push one back leg up while you push the skin away, and it will easily slip out. Then do the same with the other leg, then cut around the bone of the tail to free the whole backend. Now you can pull the skin forward and over the front legs, all that is left for you to do is cut through the neck and give it to the ferret or the dog.
To joint the rabbit cut across the spine at the pelvis and again at the bottom of the ribcage, which separates the saddle, and then cut along the spine to give two shoulder and two hind-leg joints.
